Momone, also spelt momoni, is one of Ghana’s famous preserved fish ingredients. It is made from various fish, but also squid and octopus occasionally, by gutting and washing the fish then rubbing them with salt before packing them in layers. The salted fish is left to ferment for about a week. Then, they are dried in the hot sun. The result is a speciality used in many recipes.
